An all-around great cup of coffee! These beans cover all the bases of a well-rounded, balanced, full-complexity bean with heavy notes of chocolate and a full body. Absolutely delicious!

The region of Ayarza is special, landmarked by the drastic landscape and cold blue water from the Laguna de Ayarza and Laguna Azul. The lake was formed by two massive volcanoes that collapsed and formed a large crater. This region is notorious for great quality coffee beans, and there is no doubt these beans level up to that reputation. For nature-processed coffees under the Blue Ayarza mark, the best cherries from smallholders in the region are delivered to the mill, often in their pickup trucks. The Cherry is sent to Amatatilan for drying. The coffee starts drying for ten days on the patio and then finishes being dried mechanically for 5-10 hours.
